Bruschetta is a very traditional appetizer in many Italian restaurants. While it generally consists of diced tomatoes, basil, olive oil, garlic, and onions, we are going to add a twist to it so we can break out that Kamado Pro Grill again! Brushcetta with BBQ pulled pork is a perfect fall dish that will be more than welcome when your friends who come over to watch football every Sunday invade your home.
1 loaf French bread, cut into ½” slices
Large white onion, sliced
½ # pulled pork (follow this recipe for homemade pulled pork)
2 T butter
2 cloves fresh garlic, smashed
1. Turn your grill on high
2. On the oven over medium heat, add two tablespoons of olive oil and butter to pan. Allow to melt. Sauté onions until they have a deep brown color (should take about 15-20 minutes). Be sure to stir constantly so they do not burn.
3. Brush the sliced French bread with olive oil (both sides). Rub garlic over bread and then lightly season with salt and pepper. Place the bread on the grill and allow to get golden crisp, then flip and do the same for the other side. Remove the bread from the grilling service and set on plate to cool.
4. Place a small scoop of pulled pork on each slice of bread. Add a small spoon of sautéed onions and a dollop of the BBQ sauce. Garnish and serve.
