Grill Up A Packet Of Mouthwatering Seafood With Herbed Stuffed Bread

Seafood lovers will enjoy this recipe for a grilled packet of herbed seafood with accompanying herbed grilled stuffed bread. This recipe serves four so in 30 minutes, the entire family will have a delicious meal.

Ingredients for Seafood Packet:

  • ½ pound deveined, peeled, uncooked large shrimp (thaw if frozen)
  • ½ pound bay scallops
  • ½ pound orange roughy fillets, cut to form 1-inch pieces
  • 4 cups hot, cooked rice or pasta
  • 3 tablespoons melted margarine or butter
  • 2 tablespoons lemon juice
  • 2 teaspoons dried marjoram leaves
  • ½ teaspoon lemon peel, grated
  • 1/8 teaspoon pepper
  • Heavy-duty aluminum foil
  • Cooking spray

Step 1: Heat the grill to medium heat. Tear off an 18×18-inch sheet of aluminum foil and spray it with cooking spray.

Step 2: Arrange the scallops and pieces of fish on the foil and top with the shrimp. Sprinkle on the pepper, lemon peel, and marjoram. Drizzle lemon juice and butter on top.

Step 3: Bring up each corner of foil to the center of the packet and loosely seal the packet.

Step 4: Place the packet on a grill grate. Cook until scallops are opaque and white, shrimp are pink, and the fish flakes when poked with a fork. Total cooking time is approximately 8 to 10 minutes.

Step 5: Serve the seafood mixture over the rice or pasta.

Ingredients for Herbed Grilled Stuffed Bread:

  • 4 crusty dinner rolls, each 4 inches long, cut in half crosswise
  • 2 ounces reduced-fat cream cheese, softened
  • 1/4 teaspoon Italian seasoning
  • 4 dashes garlic salt
  • Aluminum foil

Step 1: Prepare the grill for indirect heat on medium temperature. Cut four 12×8-inch pieces of aluminum foil.

Step 2: Mix the cream cheese, garlic salt, and Italian seasoning in a small bowl. Spread the mixture on the cut side of each roll.

Step 3: Place each roll into the center of a piece of foil. Fold the aluminum foil over the roll so its edges meet. Use a ½-inch tight fold to seal the edges and then fold again. Leave some space on each side for expansion and circulation.

Step 4: Put the packets onto an unheated area on the grill. Grill until rolls are heated through, approximately 7 to 10 minutes.
