Grilled Bacon, Cheese, and Potato Packets

This recipe creates a simple side dish that is tasty and requires no clean up. Set aside just 15 minutes to prepare and 35 minutes to cook this six-serving treat that will become a family favorite. Ingredients are in season during all times of year so keep the grill on standby.


  • 6 large potatoes, washed and cut into ¼-inch slices
  • 1 cup mozzarella cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 6 tablespoons butter, cut in small pieces
  • ½ cup parmesan cheese, grated
  • 2 medium onions, chopped
  • 12 bacon slices, cooked and chopped into pieces
  • 2 teaspoons seasoning salt
  • Garlic powder
  • Black pepper
  • Cooking spray
  • Heavy-duty aluminum foil

Step 1: Tear off two pieces of aluminum foil, each about 18 inches long. Spray one side of the foil with cooking spray.

Step 2: Divide the onions and potatoes evenly between the pieces of foil. Sprinkle one teaspoon of seasoning salt and garlic powder and pepper to taste onto each one. Toss ingredients lightly to coat the onions and potatoes with the seasonings.

Step 3: Combine the grated parmesan and shredded cheddar and mozzarella cheeses in a bowl. Divide into two portions and sprinkle each over the onions and potatoes.

Step 4: Divide butter and bacon into two portions and sprinkle one of each onto the potatoes and onions.

Step 5: Bring together the opposite ends of the foil and fold these down several times to create a seal. Fold any unsealed ends toward the ingredients and crimp them. Once the packet is sealed, poke it with  fork to create small holes for steam to escape.

Step 6: If preparing in advance of grilling, refrigerate the packets until ready to cook.

Step 7: Heat grill to medium temperature and put the packets onto the grill grate. Cook until the potatoes are tender to the touch with a fork, approximately 35 to 40 minutes.

Step 8: Remove the potatoes from the grill, open the packets slowly, being careful to avoid the escaping steam. Sprinkle with additional grated or shredded cheese, if desired, and serve hot.
