Grilled Chicken Skewers With Butter Rum Sauce

grilled chicken skewersFew things are more fun to eat than chicken on a stick. This recipe for chicken skewers gives you an excuse to fire up the grill during any time of year. The gooey rum sauce is a perfect complement to the crunchy, nutty crust on this delicious snack. Enjoy these skewers on game day, during a family BBQ, or just as a special treat. The recipe serves four people but can be adjusted to accommodate a larger group.

Ingredients:

  • 1 pound skinless, boneless chicken legs or thighs
  • 1 pound skinless, boneless chicken breasts
  • 2 green onions, white and green parts chopped finely
  • 2 cups assorted nuts, crushed
  • ½ cup butter
  • ½ cup honey
  • ½ cup peach preserves
  • 3 ounces of rum
  • 3 to 4 tablespoons of BBQ seasoning
  • 3 tablespoons vegetable oil
  • 2 tablespoons fresh ginger, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, chopped
  • Chopped fresh herbs
  • Non-stick cooking spray
  • 4 large chopsticks or bamboo or sugar cane skewers, soaked in rum

Step 1: Cut the chicken into 2-inch chunks. Use the BBQ seasoning to evenly season each piece of chicken.

Step 2: Pack chicken firmly onto skewers so each person receives approximately 8 ounces of poultry.

Step 3: Prepare the rum butter sauce by gently whisking to combine the ginger, butter, peach preserves, garlic, soy sauce, honey, green onions, fresh herbs, and rum in a small pot. Heat gently on medium heat, remove the pot from the heat, and set aside.

Step 4: Coat the grill rack with non-stick cooking spray. Preheat grill to medium-high. Lightly baste chicken pieces with vegetable oil. Put the skewers on the grill rack and sear the chicken on each side for approximately 4 or 5 minutes.

Step 5: Reduce the heat to medium-low. With the grill lid closed, indirectly grill the skewers until the minimum internal temperature of the chicken is 170 degrees, approximately 18 to 22 minutes. During the last quarter of the grilling time, baste the chicken with the rum butter sauce until the pieces are sticky.

Step 6: Place a sheet of aluminum foil on top of a flat work surface. Pour an even layer of the crushed nuts onto the foil.

Step 7: Provide the chicken with a final basting and then remove the skewers from the grill.

Step 8: Roll each chicken skewer in the nuts to create an even crust before serving.
