Grilled Turkey Gyros Perfect for Lunch or Dinner

It features ground turkey breast as a replacement and maintains all other traditional aspects of a gyro. Grilling this treat is a simple process that has delicious results. The recipe yields four gyros, each with three turkey patties, creating a hearty, healthy meal for lunch or dinner.

Gyro Ingredients:

  • 12 ounces ground turkey breast, uncooked
  • 1 cup tomato, diced
  • 1 cup cucumber, sliced thinly
  • 2 garlic cloves, minced
  • 1 egg, beaten lightly
  • ¼ cup onion, chopped finely
  • 2 tablespoons fresh flat-leaf parsley, snipped
  • 1 tablespoon of fine, dry breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon salt
  • 4 whole-wheat rounds of pita bread

Step 1: Combine turkey, egg, breadcrumbs, onion, cumin, coriander, garlic, pepper, and salt in a large bowl. Shape this mixture to create 12 patties. Flatten each patty to approximately ½-inch thick.

Step 2: Brush both sides of patties with some olive oil. Wrap the rounds of pita bread in foil.

Step 3: Grill the pita bread packet and the patties directly on medium heat. Grill until a food thermometer inserted into each patty registers 165 degrees Fahrenheit and pitas have heated through, approximately 6 minutes. Turn patties and pita packet once halfway through the grilling time.

Step 4: Place three turkey patties onto each pita round. Top with slices of cucumber, tomatoes, and parsley. Drizzle some cucumber-yogurt sauce (recipe below) on top of each. Fold the pita around the filling and use toothpicks to secure it.

Cucumber-Yogurt Sauce Ingredients:

  • 2 garlic cloves, minced
  • 1/3 cup fat-free, plain yogurt
  • ¼ cup cucumber, seeded and shredded
  • 1 tablespoon sesame seed paste (called tahini)
  • 1/8 teaspoon salt

Combine the ingredients in a small bowl. Cover the bowl and chill the sauce for 20 minutes or longer before using it to top the cooked turkey gyros.
