Grilling Spicy Bison Steak Served With Cucumber Salad And Avocado Dipping Sauce

If you prefer grilled bison steak with a kick of spiciness, you have to try this recipe. It features a spicy rub that is cooled by a delicious cucumber salad and creamy avocado steak dipping sauce. Harvest the avocado, cucumber, and dill from your garden or purchase them from your local farm market to enjoy the delicacies of late summer.

Grilled Bison Steak Ingredients:

• 2 pounds of bison steak
• 1 medium avocado, peeled and pitted
• 1 cucumber
• ¼ cup fresh dill, chopped roughly
• ¼ cup sour cream
• 2 tablespoons lime juice
• 2 teaspoons plus ½ teaspoon kosher salt
• 2 teaspoons jalapeno chile peppers, minced
• 1 teaspoon chipotle chile powder
• 1 teaspoon dry mustard
• 1 teaspoon garlic, minced
• ½ teaspoon ground cumin
• ½ teaspoon ground coriander
• ½ teaspoon black pepper
• Blender or food processor
• Olive oil
• Basting brush
• Sharp knife
• Bowl with lid
• Small bowl

Step 1: Cut approximately 3 inches of cucumber and chop it coarsely. Reserve the remaining cucumber for the Cucumber Salad recipe below.

Step 2: Put the chopped cucumber into the blender or food processor. Add sour cream, avocado, lime juice, dill, ½ teaspoon salt, garlic, and jalapeno pepper. Puree the ingredients until the mixture is smooth. Pour mixture into a bowl, cover the bowl, and refrigerate.

Step 3: Prepare steak rub by combining dry mustard, black pepper, chipotle chili powder, 2 teaspoons salt, cumin, and coriander in the small bowl and set this aside.

Step 4: If necessary, cut steak into individual portions to make it easier to grill. Use the basting brush to apply olive oil to each side of the steaks. Evenly season the steaks with the rub. Allow the steaks to sit for 30 minutes at room temperature.

Step 5: Adjust the grill to high heat. Grill the steaks directly over the heat, cooking for between 4 and 6 minutes for medium-rare doneness, turning one or two times. Remove the steaks from the grill and allow them to sit for 5 minutes.

Step 6: Cut steaks into ½-inch thick slices, cutting across the grain. Serve steaks warm with the Cucumber Salad (recipe below) and Avocado Dipping Sauce prepared in Step 1.

Cucumber Salad Ingredients:

• Cucumber reserved from Grilled Skirt Steak recipe
• 1 small shallot, sliced
• 1 miniature sweet yellow pepper, sliced
• ¼ cup sweet red pepper, chopped
• 2 tablespoons lime juice
• 1 tablespoon fresh dill, chopped
• 1 tablespoon olive oil
• Black pepper
• Salt
• Bowl

Combine the yellow pepper, red pepper, cucumber, shallot, olive oil, lime juice, pepper, salt, and dill to taste in the bowl.
