Have Fun With The Grill By Preparing Asian Beef Kabobs

If you want a meal that is hearty, delicious, and easy to prepare on the grill, try making some kabobs. This recipe features peppers, cubed beef, and chunks of corn on the cob in an Asian marinade. If you plan to use wooden skewers, let them soak in water for 30 minutes or more before using them so they will not break.

This recipe involves marinating for up to 24 hours so prepare it the night before you will be grilling. It yields four servings and requires 40 minutes of preparation time and approximately 15 to 18 minutes of grill time. Each serving has just 311 calories and four grams of saturated fat. Let kids load their own kebob sticks so they feel like they helped prepare the meal!


• 1 pound beef tenderloin, in 1 ¼ to 1 ½-inch cubes
• 8 baby bok choy (if desired)
• 3 ears of sweet corn, cut to form 1 ½-inch pieces
• 2 yellow, orange, and/or red sweet peppers, cut to form 1 ½-inch pieces
• 2 tablespoons peanut oil
• 2 tablespoons orange juice
• 2 tablespoons reduced-sodium soy sauce
• ¼ teaspoon crushed red pepper flakes or cayenne pepper
• Large, resealable plastic bag
• Small bowl
• Mixing spoon
• Large, shallow baking dish
• 12 metal or wooden skewers

Step 1: Put the bok choy (optional), sweet peppers, and beef cubes into the plastic bag.

Step 2: Combine the cayenne pepper, orange juice, oil, and soy sauce in the small bowl. Add this mixture to the plastic bag, seal the bag, and turn it to coat the contents. Place the bag into the baking dish and marinate for 4 to 24 hours in the refrigerator, occasionally turning the bag.

Step 3: Drain the beef mixture and discard the marinade. If you are using bok choy, thread it carefully onto one metal or wooden skewer. Thread the sweet pepper, beef, and corn pieces alternately onto each of the other skewers. Use a paring knife or metal skewer to pierce the corn before you thread it onto wooden skewers.

Step 4: Heat the grill to medium and grill the skewers on the grill rack until the beef reaches the desired doneness, approximately 15 to 18 minutes, occasionally turning skewers during cooking.

Step 5: Add the skewer containing bok choy during the last 10 minutes of grill time and turn it occasionally.
