Healthy and Delicious Lobster Rolls

lobster rollsYou do not need to live in Maine or Florida to enjoy a delicious lobster roll. Look no further than the freezer section of the supermarket to find uncooked lobster tails when live lobsters are not available. Lobster rolls are seafood lover favorites and they taste even better with grilled lobster. This recipe yields four servings and takes just 40 minutes to prepare.

Ingredients:

  • 2 ten to twelve-ounce lobster tails, thawed
  • 1 cup snow peas
  • ¼ cup reduced-fat mayonnaise
  • ¼ cup celery, minced
  • 1 tablespoon shallot, minced
  • 1 tablespoon and 2 additional teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon fresh tarragon, chopped
  • ½ teaspoon ground pepper
  • ¼ teaspoon garlic powder
  • 1/8 teaspoon salt
  • 4 whole-wheat hot dog rolls

Step 1: Preheat the grill to medium-high temperature.

Step 2: Turn the lobster tails so the soft side of the shell faces up and place the lobster tails on a cutting board. Use kitchen shears to cut the tails in half lengthwise, beginning at the fan and cutting through the shell. Loosen lobster meat within the shell by running your fingertips along the interior of the shell.

Step 3: Brush the lobster meat with olive oil.

Step 4: Lay the lobster tails on the grill rack with the cut side down. Cook approximately 5 to 6 minutes or until the shell begins to turn red and the lobster meat is lightly charred. Turn the lobster tails over and continue grilling for approximately 2 to 4 minutes or until the shells are completely red and the meat appears opaque and is cooked through. Remove the lobster tails from the grill and place them on a cutting board.

Step 5: Grill the hot dog rolls for approximately 3 to 5 minutes on direct heat.

Step 6: Add water to a small pot and bring it to boiling on the stove. Add snow peas and cook for approximately 1 minute or until they are bright green. Drain the peas, refresh them with cold water, and slice them thinly, almost shredding them.

Step 7: Once the lobster tails have cooled, remove the shells and chop the lobster meat coarsely.

Step 8: In a large bowl, mix the garlic powder, salt, pepper, mustard, tarragon, shallot, lemon juice, celery, and mayonnaise. Stir in the chopped peas and lobster meat. Divide the lobster salad between the toasted hot dog rolls and serve.
