Healthy Chili and Garlic-Rubbed Lamb

Each serving is less than 200 calories and the taste of the meat is enhanced by a spicy rub featuring chili and garlic. Let lamb marinate up to 24 hours for the best flavor. Within only 20 minutes, you will have a delicious entrée that serves four people.


  • 8 lamb loin or rib chops, each cut 1-inch thick
  • 4 large garlic cloves, minced
  • 1 tablespoon chili powder
  • 2 to 3 teaspoons olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon dried, crushed thyme
  • ½ teaspoon pepper
  • ¼ teaspoon allspice, ground
  • ¼ teaspoon cinnamon, ground
  • Grilled tomatoes (if desired)

Step 1: Smear salt and garlic together on a cutting board with the flat side of a knife. Transfer this paste to a small bowl.

Step 2: Stir in cumin, chili powder, pepper, sugar, cinnamon, allspice, and thyme. Stir in enough of the olive oil to create a paste.

Step 3: Rub the paste all over the lamb. Cover and refrigerate the lamb for between 4 and 24 hours.

Step 4: Insert a drip pan before adjusting the grill to medium-high. Test above the pan for medium heat. Place the lamb on the grill rack over the pan. Grill for 16 to 18 minutes for medium rare lamb or 18 to 20 minutes for medium, turning one time halfway through grilling time.

Step 5: Serve with grilled tomatoes, if desired.
