Hearty Grilled Meatloaf Shepherd’s Pie

Meatloaf…you either love it or hate it. Those who fall into the first category should try grilling their meal because ground meat soaks in the smoky flavor of the grill. Meatloaf is the perfect meal for a chilly day and cooking it on the grill makes the process much more fun. This recipe combines grilled meatloaf and creamy mashed potatoes for a unique twist on traditional shepherd’s pie.


  • 1 pound ground sirloin
  • 3 garlic cloves, minced
  • 1 medium onion, diced
  • 1 egg
  • 1 medium carrot, chopped finely
  • ½ pound ground pork
  • 1 cup regular or panko bread crumbs
  • ½ cup asiago cheese, grated and packed loosely
  • 4 ounces barbecue sauce
  • 2 teaspoons brown sugar
  • 1 ½ teaspoons salt
  • 1 teaspoon thyme
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • Large plastic bowl
  • Disposable aluminum bread loaf pan
  • Turkey baster
  • Scissors


Step 1: Put all ingredients into the plastic bowl. Mix the ingredients with clean hands, being careful not to mash the meat too much. Leave some crevices and air pockets to prevent the meat from becoming too dense and drying during cooking.

Step 2: Add the meatloaf to the aluminum pan. This makes it easy to slice meatloaf leftovers for sandwiches. It is also easier to remove an entire grilled meatloaf from this pan because you can cut the pan open with scissors.

Step 3: Heat the grill to 300 degrees Fahrenheit. On a small grill, place the charcoal on one side and with a larger model, place the coals on either side, leaving the center free of coals. Place the aluminum pan on the grill grate area that has no coals beneath it. Grill for one hour.

Step 4: In the meantime, prepare the mashed potatoes using the recipe below. Spread the mashed potatoes evenly on top of the meatloaf after one hour of grilling. Grill for 30 minutes more or until the potatoes have browned.

Step 5: Remove the meatloaf from the heat and let it sit for 8 to 10 minutes, removing excess grease from the ends with a turkey baster.

Step 6: Cut each corner of the aluminum pan with the scissors, lay down the sides of the pan, and transfer the meatloaf to the cutting board. Slice into individual portions.


Mashed Potato Ingredients:

  • 3 red potatoes, chopped
  • ½ cup asiago cheese, grated and packed loosely
  • ¼ cup heavy cream
  • 1 tablespoon butter
  • Black pepper
  • Salt
  • Pot
  • Mixer

Step 1: Boil the potatoes in water in the pot until they are tender to the touch.

Step 2: Put the cooked potatoes and other ingredients into the mixer and blend until the potatoes are the desired consistency.
