For a twist on traditional tacos, grill some salmon. This fish features omega-3 fatty acids, which have many healthy benefits. You will need:
• 1 pound of frozen or fresh salmon fillets, skinless
• 1 cup mild green salsa
• 1 cup (8 ounces) medium round white or red potatoes
• ¾ cup (approximately 6) green onions, sliced
• ½ cup light dairy sour cream
• ½ cup fresh cilantro, snipped
• 3 tablespoons lime juice
• 1 ½ teaspoons ground chipotle chile pepper
• 12 six-inch or 16 four-inch corn tortillas, warmed
• ¾ teaspoon sugar
• ½ teaspoon salt
• Lime wedges

Step 1: If the salmon is frozen, thaw it. Rinse the fish, pat it dry with paper towels, and set it aside.
Step 2: Bring salted water to a boil in the saucepan and cook the potatoes until tender, approximately 15 minutes. Drain the potatoes and cool them.
Step 3: Combine the sugar, chile pepper, and ¼ teaspoon salt in the small bowl. Measure the thickness of the salmon fillets and then rub the chile pepper mixture into the fillets.
Step 4: Grease the grill rack with the cooking spray. Grill the fish directly on medium heat for between 4 and 6 minutes per each ½-inch of thickness. Turn fillets halfway through grilling time. Fish is done when it flakes easily using a fork test. Allow salmon to cool slightly and then break it into chunks.
Step 5: Combine the lime juice, remaining salt, and salsa in the medium bowl. Add the green onion, cilantro, potatoes, and salmon chunks. Toss gently to coat the salmon and potatoes with the other ingredients.
Step 6: Divide the salmon mixture among the tortillas. Top each tortilla with sour cream and fold it to create a taco. Garnish with lime wedges when serving.
