Grilled Lemon Pepper Chicken
Grilled chicken is something quite common so if you want YOUR grilled chicken to stand out, isn’t it time you found a recipe offering different flavors than the typical rubs or BBQ sauces? Lemon chicken is a dish that is often prepared inside and served baked, but when it is on the grill, it creates a much different flavor.
6 Chicken Breasts
1t Lemon Zest (fresh, grated)
1T fresh garlic (minced)
1/3c Extra Virgin Olive Oil
1/3c Fresh Lemon Juice (NOT bottled)
1T Fresh Rosemary (minced)
Kosher Salt (to taste)
Ground Black Pepper (to taste)
Flatten out the breast using a mallet.
In a small bowl, combine lemon zest, garlic, olive oil, lemon juice, rosemary, and 2t of fresh ground pepper. Lightly sprinkle salt over the breast and then place in a 9″ Pyrex dish. Pour marinade over chicken, cover, and refrigerate for four hours (chicken should be turned once every hour so all sides are coated with marinade).
Preheat grill and place chicken towards outside of grill (do not put directly over heat source). Allow the chicken to cook for about 15 minutes and then turn. Allow chicken to cook for an additional 15 minutes until outer skin is browned and internal temperature is 165 degrees.
If you want to garnish the dish, you can cut a lemon in quarters and grill them during the last stages of the chicken cooking. Serve the wedges with grill marks facing up.
