• 6 pork top loin boneless chops, cut to ¾-inch thickness
• 4 plum tomatoes, chopped
• 2 jalapeno or Serrano peppers, seeded and chopped finely
• 2 green onions, sliced
• 1 small cucumber, seeded and chopped
• ¼ cup lime juice
• ¼ cup red onion, chopped finely
• 3 tablespoons jalapeno jelly
• 2 tablespoons fresh cilantro, snipped
• 1 tablespoon toasted sesame oil
• 1 tablespoon honey
• 1 teaspoon crushed cumin seed
• Plastic bag

Step 1: Trim the fat from the pork chops. Put the chops into the plastic bag and place the bag in the dish.
Step 2: Combine the lime juice, onion, peppers, cumin seed, and sesame oil in the small bowl. Set aside 2 tablespoons of this marinade for the salsa. Pour the rest of the marinade over the pork chops and seal the plastic bag. Marinate for between 2 and 4 hours in the refrigerator, occasionally turning the bag.
Step 3: Combine the reserved 2 tablespoons of marinade, cucumber, tomatoes, honey, cilantro, and green onions in the medium bowl. Cover the bowl with plastic wrap and refrigerate it until you are ready to serve the meal.
Step 4: Drain the pork chops and reserve the marinade. Transfer this marinade to the saucepan and add the jalapeno jelly. Cook until the mixture boils, stirring occasionally. Set aside.
Step 5: Adjust the grill to medium heat. Grill the pork chops on the grill rack until juices run clear and the center of each chop is slightly pink, approximately 8 to 11 minutes. Turn chops once during cooking and during the final 5 minutes of grilling, brush the chops occasionally with the jelly mixture.
Step 6: Remove the pork chops from the grill and serve them individually with a portion of the chilled salsa.
