These single-serve pies are easy to transport, feature a homemade strawberry filling, and are prepared on the grill. Just seven ingredients and one hour are all you need to create these delicious grilled desserts. Isn’t your mouth watering already?!
- 2 cups fresh, mashed strawberries
- ¼ cup cornstarch
- 1 box refrigerated pie crusts, softened according to box instructions
- ¾ cup granulated sugar
- Powdered sugar (optional)
- 3 ½-inch round cookie cutter
- Foil pie pan
- Foil pizza pan
Step 1: Stir the granulated sugar, cornstarch, and mashed strawberries together in a 2-quart saucepan on a burner set to medium heat. Heat the ingredients until boiling and cook for 1 minute, stirring constantly. Mixture should be very thick. Allow approximately 15 minutes for the filling to cool completely.
Step 2: Cover a flat work surface with a light coating of flour. Cut 8 rounds out of each pie crust. Moisten the edges of each round with water.
Step 3: Spoon 2 teaspoons of the strawberry filling onto half of each round. Fold the other half over the filling. Use a fork to press the edges together to create a seal.
Step 4: Put the pies onto an ungreased foil pizza pan. Use the fork to prick the top of each pie.
Step 5: Heat the grill to medium-high (approximately 350 degrees Fahrenheit). Put the foil pie pan on the grill grate upside down, creating an elevated surface. Put the pizza pan on top of this. Cook pies until their crusts are golden brown, approximately 12 to 15 minutes. Remove pies from the grill and cool them for 10 minutes before serving.
Step 6: If desired, sprinkle powdered sugar on top of each pie before serving. Leftover pies can be stored tightly covered for up to three days.
