Many people grill burgers, steaks, and hot dogs but only true grill lovers barbecue their sandwiches. The Reuben sandwich was made for grilling because it combines meat, cheese, and greens in an ooey, gooey package that no one can resist. In this unique Reuben recipe, focaccia bread replaces pumpernickel, yielding an extra-special sandwich.
Ingredients for four sandwiches:
- 1 ½ pounds (4 cups) green cabbage, sliced thinly
- ½ pound corned beef, sliced thinly
- ¼ cup mayonnaise
- ¼ cup ketchup
- 2 tablespoons cider vinegar
- 2 tablespoons unsalted butter, softened
- 1 tablespoon sugar
- ½ teaspoon salt
- 8 slices Gruyere cheese, each ¼-inch thick
- 4 pieces of focaccia, each 4×6 inches, split
Step 1: Toss the cabbage, salt, sugar, and vinegar in a large bowl. Let stand, tossing occasionally, for approximately 30 minutes or until softened.
Step 2: Coat the grill grate with cooking spray and heat the grill to medium.
Step 3: Spread softened butter on the outside of each piece of focaccia. Place the focaccia cut side up on a flat work surface.
Step 4: Combine the mayonnaise and ketchup in a small bowl. Spread this onto the bottom halves of focaccia. Place a slice of cheese on top of the dressing. Top this with corned beef, some cabbage mixture, and the remaining slice of cheese. Place a remaining slice of focaccia on top of each sandwich.
Step 5: Put the sandwiches on the grill grate and cook until the cheese melts and the focaccia is golden and crisp, approximately 6 minutes, flipping halfway through the cooking time. Remove sandwiches from the grill, cut each in half, and serve.
For an extra treat, serve these grilled sweet potatoes on the side:
- 2 medium sweet potatoes
- Olive oil
Step 1: Peel the sweet potatoes and cut them into slices each ½-inch thick. Lightly brush each slice with olive oil or put the potatoes in a sealable plastic bag, add the oil, close the bag, and shake it to coat the surface of the potato slices.
Step 2: Season the sweet potato slices with salt. Put the potatoes on the grill grate and cook for 3 minutes per side.
Step 3: Move the sweet potato slices to indirect heat and cook for an additional 20 to 30 minutes until they are cooked tender and soft, turning halfway through the cooking time.
Step 4: Remove the potatoes from the grill, add more salt if desired, and serve.
